Today I woke up and made my black coffee like every other day. I don’t usually have breakfast because I really don’t feel the need to eat anything in the morning. I get hungry a few hours after I’ve woken up.


 

To be honest, I don’t believe in the statement that says breakfast is the most important meal of the day. I feel perfectly fine without having breakfast in the morning. At the end of the day, it all comes down to the calories you’ve consumed for the day.

 


 

However, there are some rare occasions when I wake up really hungry. I don’t know why, it just happens. And in these moments, I typically crave something sweet. However, I always strive to eat high-protein low-calorie breakfast.

This was the case today. I woke up, I made my coffee, I had a few sips, but I felt that I need to eat something. I knew I couldn’t wait until lunch.

So I went downstairs, I opened the fridge, and started investigating. I didn’t feel like eating oatmeal, even though I really love it. Banana and peanut butter toast? Maybe, but not exactly. Banana pancakes? Definitely.

Back in the days, when I was trying to lose weight, banana pancakes were my favorite. The reason being is that they’re sweet, low-calorie, delicious, and really filling.

The healthy pancakes recipe I’m about to share with you is super simple, and it’s also budget-friendly. I believe that healthy eating shouldn’t come to the price of food. No matter what you see on the label of the product, expensive doesn’t always mean healthy.

Many people automatically think something is great for them when they see the words NO-GMO, Vegan, Palm Oil Free, No Preservatives, etc. And usually, foods labeled like this are at a higher price. But believe me, in many cases, when you read the label at the back of the product, you’ll see that it contains things worse than dairy and palm oil.

In other words, you don’t need overpriced products to lead a healthy lifestyle. Eggs, cottage cheese, oats, fruits, vegetables – these are all budget-friendly and healthy foods you can consume daily.

As I said, this healthy pancakes recipe is super easy. You only need five ingredients to have a high-protein low-calorie breakfast.


Healthy Pancakes Recipe

Ingredients

  • 1 egg
  • ½ banana
  • 1tsp cinnamon
  • 50g cottage cheese
  • 1tsp natural peanut butter

Instructions

  1. Heat your pancake pan with a splash of oil of your choice.
  2. In the meantime, mash the banana with a fork, add the egg, the cottage cheese, and the cinnamon.
  3. Mix everything together.
  4. Spread the oil evenly on the surface of the pan using a piece of paper towel.
  5. Using a spoon form mini pancakes on the pan.
  6. Flip the pancakes when they’re set around the edges and brown on the bottom. I suggest you use a metal spatula for easy flipping.
  7. Once they’re ready, transfer the pancakes to a place and add a teaspoon of natural peanut butter on the side.
