I remember when I used to go to university, and during my lunch break, I’d go to a super cozy restaurant where they offered nothing but soups, salads, and sandwiches. My favorite dish was broccoli soup with cheddar, and I could literally eat this on a daily basis. A few days ago, I decided to use some of the products in my fridge before they go bad, and I’ve come up with this super easy broccoli soup recipe. Easy Broccoli Soup Recipe: Ingredients
To cook this easy broccoli soup recipe, you’ll need nine ingredients in total. What’s so great about it is the fact that it’s diet-friendly, and all non-vegan products can be substituted, in case you’re living a dairy and meat-free life. What’s more, it’s a great option if you’re on a budget since, as you’ll see, all products are absolutely affordable.
- 1 broccoli head
- 3 potatoes
- 1 zucchini
- 1 large onion
- a handful of chopped green onion
- 1 tbsp butter
- 50 gr Emmental cheese
- salt
- black pepper
Easy Broccoli Soup Recipe: Preparation
The first thing you need to do is wash and peel off your potatoes. Then wash the rest of the veggies; peel off the onion, and chop it into small pieces. Do the same with the rest of the veggies. I advise you to use the broccoli stem, as well. I personally never throw it away. Put the chopped potatoes, broccoli, onion, zucchini, and green onion into a deep pot. After that, bring everything to a boil.
Once the veggies are nice and cooked, remove the pot from the stove and prepare your food processor. What I do is I first puree just the veggies with a little bit of water from the pot. Then I add as much liquid as I desire. I don’t like my cream soups to be super runny, so this step depends entirely on your preferences. If you wish, you can add all water from the pot.
Then, you want to add a tablespoon of butter into the hot cream soup and 50 grams of shredded Emmental cheese. If you don’t have it, you can add any similar cheese, such as cheddar or provolone. And if you’re a vegan, you can just use substitutes for these two ingredients. Lastly, you have to add salt and pepper to taste. Give the soup a good stir and serve with crumbled feta. I like having it with some kind of crackers on the side, as well.
